To live your best life, live each and every day to the fullest. Thank God for each new morning you wake up, because you have a new opportunity to be happier than you were yesterday.

Ralph Waldo Emerson wrote:

He said, “Write it on your heart that every day is the best day in the year. He is rich who owns the day, and no one owns the day who allows it to be invaded with fret and anxiety. Finish every day and be done with it. You have done what you could. Some blunders and absurdities, no doubt crept in. Forget them as soon as you can, tomorrow is a new day; begin it well and serenely, with too high a spirit to be cumbered with your old nonsense. This new day is too dear, with its hopes and invitations, to waste a moment on the yesterdays.”

So remember that life is not for complaining, but rather for hundreds of reasons to be thankful. Be thankful for your home. Be thankful for the friends and family that love you. Be thankful for the food on your table and the money in your wallet. Be thankful for the rain and the wind, and the snow and the sunshine.

Sing out loud. Laugh with gusto. Dance in the rain. Enjoy every moment you are lucky enough to have. Hug your children and grandchildren. Eat some pie! Stay positive! Be kind! Take care of yourself. And give all thanks to our Lord and Savior, because He is walking with you each and every day.

Salted Caramel Apple Cake

Fall is on the way and what better way to usher its arrival in than with a classic Salted Caramel Apple Cake! And just in time to use some of those lovely fall apples.

3 apples, peeled, cored and cut into 8 wedges each
4 Tbsp. unsalted butter
1 Cup brown sugar
1 Tsp. salt

Cake:
8 Tbsp. unsalted butter, softened
1 Cup sugar   
½ Tsp. salt
2 Eggs  
½ Tsp. vanilla   
2 Tsp. baking powder
2 Cup half-and-half

Preheat oven to 350°F. Line 10” cake pan with parchment paper and coat with non-stick spray. Cook apples, butter, salt and brown sugar over med. heat until apples begin to soften. Pour into cake pan and arrange apples in desired pattern. Mix butter and sugar until fluffy. Add eggs and vanilla & mix until smooth. Add dry ingredients and half-and-half. Mix until combined and smooth. Spread batter evenly over apples. Bake 40-45 mins. Cool slightly before inverting onto serving dish. Serve with ice cream or whipped cream. ENJOY!

Crockpot Ravioli

Something yummy and easy for a busy week night:

Crockpot Ravioli

1 Tbs. Olive oil
1 med. Chopped onion
2 large Minced garlic cloves
1-2 lbs. Lean ground beef
1 26 oz. Jar marinara sauce
1 15 oz. Can tomato sauce
1 Tsp. Italian seasoning
1 25 oz. Pkg. of cheese ravioli
3 cups Shredded mozzarella
¼ cup Parsley 
Salt and pepper to taste

Heat oil and cook garlic and onions. Add ground beef & brown. Drain. Add Marinara and Tomato sauce. Pour 1/2 cup of sauce into Slow Cooker and dump ½ bag of ravioli on top and add half of the mozzarella. Then add rest of the ravioli and top with the rest of the meat sauce. Top with remaining cheese. Cook on low for 5-8 hrs. You can add some crumbled sausage to the meat and some parmesan for extra flavor. (I do.)
