Embrace the Day

Sometimes we go through seasons of joy and sometimes we face seasons of sadness. We see bleak and dark days that really drag us down into a place of despair. Maybe we are fighting battles that others cannot see. Maybe it is cancer or divorce or the loss of someone you truly loved such as a parent or spouse. Maybe your child is going through something that you just can’t fix such as a miscarriage.

There are so many things to be pessimistic about. But, if you look to our Lord who wakes you up each and every day, you know He has a plan for you. He is always with you. He wants you to be happy. He wants you to look for the good and the beautiful in your life.

Every morning thank God that the sun is shining. That you have been granted yet another day. You are a breathing, living human being! We all know life is not always easy. It can get messy. But, when we witness the glory of the sun rising, we know God is there, watching over us.

When you plant a garden and see it flourish, we know this is God’s work. We know that our grandchildren are rays of sunshine that God has given us. We know that worry drains us of our joy. We know that life is short. If we expect something wonderful to happen each and every day, then we set ourselves up to look for the joy and love God brings us.

Spread kindness wherever you go. Smile at those you pass. Find beauty in the earth God has created. Learn how to forgive others and yourself. Enjoy the people who love you. Wrap yourself in the safety and compassion they bring to you. Thank the Lord for giving you another day to start over and seek the joy He has in store for you. Remember that there is no greater connection to the beauty of life than our Heavenly Father who appreciates you and uplifts you today, tomorrow and every day you wake up.

Glorified Onion Pork Chops

Everybody who knows me, knows I love to cook. I also love to take recipes and put my own spin on them. Sometimes they turn out great and sometimes not, but the ones that do, I keep and share.

So for a quick and easy week night dinner, try these Glorified Onion Pork Chops. Prep time is about 10 minutes, cooking time is about 25 to 30 minutes and it serves six.

Ingredients (original):
1 tbs. veg. oil
6 bone-in pork chops, ½ thick
½ cup chopped onion
1 can condensed cream of celery soup (I use fat-free)
½ cup water

Ingredients (I added):
A splash of red cooking wine or any red wine you have
Garlic powder
Pepper to taste
Celery Salt

Directions: Sprinkle Garlic powder, pepper and celery salt onto chops. Heat oil in 12” pan and brown on both sides. Remove and then cook onion until tender. Return chops, stir in soup, water and wine. Bring to a boil, reduce heat and cook until chops are done.

These pair well with a green vegetable and mashed potatoes. To save time on a busy week night, I buy store-bought mashed potatoes.
